Japan and Korea were traditionally agrarian based societies for most of their history; add to that fact that Buddhism played a major role in their culture so it was only until not very long ago that meat was incorporated into their diets. Hence, traditionally in Japan as it is in Korea, vegetables take centre stage in any meal.

the Japanese word for carrot sounded funny. then again Kaga might play a role in that. :)

In the "if my memory serves me correctly segment" guy says "oh, look just trust me" that does sound very convincing...heh. But, hey it true about the meat of the carrots.

They say children would be unimpressed by the theme ingredient. But honestly I am as well. Carrots are nice for adding color and a bit of earthy sweetness... but as a main ingredient? Besides soup, cake, and side dishes, I'm having trouble thinking of any uses for it as a central item... which piques my curiosity as to what the chefs will be doing...
