One of the main reasons why we started the Ajaxo $4 Challenge was because we wanted to prove not only to us, but to the world that even though times are tough it's still possible to create both nutritious and fulfilling meals on a budget without having to resort to processed foods. It starts with knowing what you're working with. Once you know the budget you're working with, the sky's the limit. It's all about imagination and having the resource to put that imagination into work.

It's not about about giving up food groups, but knowing when and where to buy it - Ajaxo.com gives you that information.

With less than $4.00, we made Chicken Pasta Stir Fry.

To marinate the chicken:

1 tsp of black bean garlic sauce
4 tsps o soy sauce
1 tsp of salt
a dash of white pepper
2 tsps of corn starch
a bit of black pepper
2 tsps of sugar
1 tsp of oyster sauce

Mix well because the chicken will be the main component and
source of flavor in today's dish.

1. Oil your pan and set it to a high heat to seal in the juice
2. Add in the chicken, when it changes color, add in the onions
3. Let it cook together, allowing onions to carmelize for 30 to 45 seconds
4. Then, add in your carrots and celery (Remember to stir well so that all 4 elements are equally exposed to heat and the flavor is evenly spread)
5. After about a minute, go ahead and add in the pasta (You'll have to stir rigorously so the pasta doesn't stick and so that the chicken & veggies are well mixed - bringing the flavor into the noodles)
6. Continue to stir at 10-20 second intervals for approximately 3-5 minutes and serve when ready
