Electric knife sharpeners are not designed well enough to sharpen the blade from hilt to tip without creating a few voids in the blade. Consider having a professional grinder sharpen knives with information from a knife specialist in this free video on blades, knives and swords.

  • You do realize of course, that a wider edge angle will hold LONGER than a comparable thin angle?

    More steel=stronger

  • Just had my knives sharpenned & they ruined them. Obviously didn't grind it evenly, scratched the entire surface & in some places over-heated them so they've lost their temper. Make sure the person doing the job knows their arse from their elbow.

  • Newer elec sharpeners don't sharpen at the 45 degree angle he says. They sharpen evenly at 15 -17 (Asian) or 20 - 22 degrees (standard). I'm looking for an electric sharpener since I'm not a pro chef or meat cutter. My kitchen knives are not Global or Henckels. But their edges last very long with just a little steeling & stropping to touch up, straighten, & polish.. So, a 3 stage $150 elec sharpener will do just fine.
