I have owned Shun Wasabi 8'' Deba, Classic 8'' ultimate cooks knife, and currently have Elite 7'' Santoku. I love every one of them, and they all performed just great!

I can certainly attest that Kai makes some quality products. Though I regrettably do not own any of their Shun line, not yet anyway, I do own some of their more affordable kitchen knives, as well as many Kershaw utility knives, and they all perform very well. You can certainly pay much more for a lower quality product.
