  • Buffalo wings are not coated. The wings are fried using nothing, not even salt and pepper. The flavor comes from the sauce. I wonder if the coating makes them taste better or makes them greasy. I'll make a few this way when I make my buffalo wings.

  • dried batter is called a blanche, dry sauce is called a rub.

  • Wish you would have provided more information on timing...how long should they cook in the fryer? I've tried this, but my wings come out dark brown and not a golden color.
