They're small fish, the amount of meat wasted isn't very much at all. I'd take the time and cut it out, but I'm not filleting 30+ fish at a time!

It was the fish that had a sore on it. Maybe from a heron or saugeye.

Wow! That's fun to watch. What kind of knife are you using & what do you use to sharpen it with? That thing is like a razor!!

Thank you. That knife is a cabela's fillet knife and I sharpen it occasionally with a diamond stick and touch it up constantly with a standard steel.

You are quick, but what about removing the rib cage?? Check Canadian crappie king for a technique that maximizes edible flesh.
