To make the Sandwich:
1 Multi grain ( 7 grain) Bread
Pesto Sauce (almond, pine nuts, basil, salt, ground pepper, lemon juice and olive oil)
Arugula salad (1/2 c Arugula leaves with dressing:1 t olive oil, 1 t apple cider vinegar and 1 t soy sauce)
1/4 c sliced pears
1/4 c sliced avocado
3 slices of orange (sliced thinly with a sharp knife)
Brush some water outside the bread (helps soften the bread) .
Put it inside the griller. Grill for 2 min on both sides (to heat up a bit)
Slice open
Spread pesto sauce on both halves
Put just enough arugula salad at the bottom ( about 1 1/2 T)
Put Pears on top
Put Orange slices
Top with avocado slices
Cover with the other half of the bread and wrap with paper towel or your choice of wrap. Put inside the lunch box in your favorite container.
