Great video. I can't emphasize enough the importance of sourcing your own needs from nature rather than from the shop. Shop products take the craft out of bushcraft!

In Canada we call it Fatwood. never heard it called Maya wood before. Cool vid The Maya civilization was throughout Central America not only Mexico.
They are handmade and really sharp. In a recent test they ended up sharper than surgical blades. The best you can buy!

Will any evergreen work, or is this unique to the fir?

I guess most evergreens will work. The fir has the quality that it rots from the outside the inside. The resin preserves the last parts of the three. When you find a stump shaped like that you know it's full with resin.

A Mayastick is full with resin. Therefore it will make your fire catch flame much faster.
