I have a question about the do strike. Do you twist your shinai when striking do? (thus turning the "sharp" side towards the do)

yup, that way you can avoid the oponent's shinai and strike kote directly like he shows. But you have to keep mind on that your body must not face to the left, you must keep facing that wich you are cutting
