Cleaning lamb intestines, in preparation for making some traditional kokoretsi (κοκορέτσι). They have to be turned inside out, rinsed and washed with water and lemon juice or vinegar.
Kokoretsi is a Greek dish, made from a skewer (souvla) of lamb offal. Variety meats are marinated in olive oil, lots of fresh lemon juice, oregano, salt and pepper, arranged on a skewer and covered with the intestines. Kokoretsi ensures no part of the animal is wasted, and is traditional as a starter, especially at Easter.
