And because grains will stay longer than meat that became the main source of food. Since they had vitamin D deficiency the people with lighter skin grew healthier and reproduced since lighter skin absorbs more vitamin D from the sun than dark skin. But people that did not replace meat with grains never had the deficiency and never needed the evolution of lighter skin.
