Also, it sounds like the music has slightly diffeent instrumentation.
As for this level, vs. Axel, the music is slightly different.

@Ghettoflame1 I guess I'm not understanding this. To me, it seems like you're saying that the other music is on the PS1 version, but seeing as you've played the N64 version, you've heard the other music. The PS1 version has nothing really new except for Teensie cutscenes at *EVERY* level, and a bonus level from the 2D Prototype unlocked once you collect 90% of the lums and beat Razorbeard.
Not sure if the bonus level is true, just heard it off of the Rayman Wiki.

A simple matter of holding back to slow down and pushing forward to speed up.

I HAVE played the N64 version; I HAVE NOT played the PS version.

Sorry, barrel flight, final battle, and Tomb of the Ancients are better on N64.
