Is it cool to mix different modulars among one another?
I see you've done that among your doepfer setup
What's the best brand?
I'm thinking about starting with doepfer.

Hello! I recommend mixing modules, as it makes your sound more specific to you.
I would recommend buying Livewire, Harvestman, Plan B, Cwejman and other smaller brands for much of what is needed for a good setup. Doepfer is great for basic utility modules like mixers, mults, env's and such. Their stand out modules would be their BBD's, the wave multiplier and their interesting Xtreme and Morphing filters.
