Chef Remy demonstrates how to make a basic omelet. He explains the technique of making it fluffy and how to fold it over when serving. This is a Bacon and Swiss Cheese Omelet which is easy. Later, Chef Remy will show how to make omelets using many other ingredients such as shrimp or lobster.
INGREDIENTS:
Four bacon strips, cooked and chopped 2 eggs beaten
1 slice Swiss Cheese, chopped or diced sour cream
Salt and pepper to taste.
METHOD: Heat a 10 inch fry pan. It's important that it be a 10 inch pan and not a 12 inch pan. Add a tablespoon of olive oil and a couple of butter patties. Wait until the butter is fully melted and has bubbled up it's water content. Pour the beaten eggs to cover the entire pan. Tilt the pan slightly to make the egg run around the edges. Lift any edges that are becoming solid and at the same time tilt the pan to make liquid egg run under the solid cooked egg you have lifted. Go all around lifting and letting egg run under until all the edges have solidified. When all egg is cooked slide the omelet out of the pan unto a dish but fold it over as it slides off the plate. Apply a dollop of sour cream on top and serve
