I use a mortar and pestle set to mince ginger for making tea or general cooking..it minces real well

Actually, I use a shredding iron (grating iron) and that doesnt work... I dont have a coffee grinder, but I have a blender... that ought to work.

any tips on how to mince ginger? when I do it, it always comes out stringy...

The easiest way to do it is in a small grinder. We have a coffee grinder that allows for wet grinding and it works great! Alternately, you can use a fine grater and grate the ginger. Using a knife is probably the least effective.
