Thanks so much JB,, I know you have done this before , but this time you took your time , and this one is over the top. I am going to try this first with some shrimp,, I live in Georgia ,, but,, I do know where to order FRESH DAMN CRAWFISH from your area delivered overnight ! Hell no it ain't cheap, but I can get it !!!!

So the key to the roux is medium heat, constant stirring and if you see black specs, it's too late. That bisque looks unbelievable.

What if the lemon doesn't spin? Your butter takes on nutty flavour as well. Brown butter has that flavour, and Ghee does as well.
