"ESCAMOLES" - A traditional prehispanic dish in which ant eggs are the main ingredient . Some called it "insect caviar." The eggs of two species of ants are harvested: liometopum apiculatum and liometopum occidentale. Check the protein percentages of ant eggs when compared with beef and chicken at the end of the video. Their appearance is pearlescent, the size of rice krisppies, white, with a soft but "poppy" texture and a subtle flavor that has hints of vanilla. Some describe them as creamy, buttery, and nutty with a hint of menthol.
