SERVES 6

Ingredients
1 (3 lb) whole chickens
1 teaspoon minced garlic
2 tablespoons minced green seasoning (found in most West Indian grocery stores. If unable to find minced thyme and green onion should work)
1 teaspoon salt, to taste
1 teaspoon hot pepper
2 tablespoons vegetable oil
3-4 tablespoons curry powder
1/2 cup chopped tomato
1/2 cup chopped onion
1/2 cup hot water

Directions

Cut chicken into small pieces and season with garlic, green seasoning, salt and hot pepper.

Marinate for 30 minutes or more.

Heat oil in an iron pot or skillet.

Mix curry powder with 1/4 cup of water until smooth; add to hot oil and cook 2 minutes.

Add chicken and stir to coat in curry; cook until all water dries out; stir well (about 10 mins).

Add tomatoes and onion; cook for a minute; stir in 1/2 cup hot water.

Lower heat to medium; cover and cook until meat is tender; add more water if more sauce is necessary.

Adjust salt and hot pepper.

  • @JevonGotSkillz you did a great job boss,the color is good, trini curry is always darker that most jamaican curries, but you need shadow beni and to make your own green seasoning, dat store brand no make it!!! lol and i add garam masala to it as well. im a trini american and a professional chef, that in mind i think you do great on this page!

  • you did good, but garlic and cummin/ geera, cooked in the oil, before adding curry, and chicken. Makes Trini curry great

  • spot on cooking style for trini curry chicken, as for seasoning I have problems finding shadow beni in PA myself so I use cilantro instead, its not as strong so you have to use more of it but the flavor is very similar, try it sometime.

  • @bigsike80 I appreciate the feedback brethren. One correction though. Store brand don't see the light of day in my kitchen lol. My mom would turn in her grave if I did that. It's homemade. Garam masala is the business, I ain't have none handy but I should re-do with it. Lastly, Shadow beni is hard to find in arizona. I can sometimes find it in asian markets but not consistently. I appreciate the remind. I also appreciate the love!
