"Doubles" is a staple diet for the fast-paced commuters on their way to work, and in Trinidad and Tobago it is a popular food delicacy located from the roadside vendors throughout the country. According to "Piggy" the proprietor of this vendor, located on the Western main road, Trinidad, he says that the food business is no easy task and for the two hundred customers that stop each morning and politely wait in queue to quell their hunger pangs with "Piggy' tasty entrée, his hands are full for four hours.But the burden of preparing "doubles" falls to other people and by contract says "Piggy," and the preparation of making "doubles" commences in the wee hours each morning 2am to be precise so it will be ready and fresh by 7am on the streets of Trinidad.


"Doubles" (meaning two bharras) is derived from the Indian heritage in Trinidad and Tobago and like the similar national dish, "Roti," "Bharra" is fried dough filled with curried channa and served with a variety of chutneys.

Like fast food preparation, serving "doubles" is an art in itself and requires the aid of two people to work in quick unison. One is in charge of taking orders and collects money while the other follows through with one utterance," Slight" meaning the degree of pepper to go along it your "doubles." Within 10 seconds, a spoon of soft channa is taken from a white pail and generously dabbed on the "bharra," chutney is added separately and it is usually pickled cucumbers. The end result is a nutritious meal wrapped in grease proof paper and bagged in a small brown paper bag to prevent you from soiling your work clothes from the sauce drippings.

Generally "doubles" is eaten immediately. Popular "doubles" locations can be found throughout Trinidad, like the Barataria roundabout amidst the car fumes and thoroughfare of traffic people can be seen standing and eating their "doubles." at the curb or in front of the "Brooklyn Bar," Port of Spain where George and George's Ex work to compete for customers.

Note the method in which the "doubles" are served and where the operator stands on box above the customer below, the popular "Beastly Cold Nuts" is adjacent to the vendor, Trinidad, West Indies.

  • Aite, im putting a challenge out here rite now... These videos are good n all dat, BUT there are no videos on how to actually MAKE the channa and the bara! OK, Theres only ONE on Youtube buts its done by some foul mouth, drunk Canadian.

    Im challenging anybody to put out a video on Youtube that shows how to make the channa and the bara.

  • Channa is not difficult to prepare, the bara however is a flour mixture which is fried. The are many secrets that people will not share.

    Doubles needs condiments to make them more tasteful, like mango or cucumber chow
