Inspired by Charlie Papazian's Goat Scrotum Ale and Stone's Vertical Epic 09.09.09, I brew up a batch of Belgian Porter using San Diego grown hops including my homegrown Mt. Hood hops.

Recipe:

7 lbs Briess Golden LME
1 lb Crystal C60
1/2 lb Black Malt
1/2 lb Carafa Malt
1/2 lb Aromatic Malt
1/4 lb Roasted Barley
3 oz. dark unsweetened chocolate (99% cacoa)
1 cup dark candi sugar
1 cup blackstrap molasses
1 oz bitter orange peel
3 tbls cinnamon

Hop Additions:
1 oz. Nugget (10.2% AA) @ 60 min.
1 oz. Nugget (10.2% AA) @ 20 min.
1/2? oz. Mt. Hood (?% AA) @ 6 min.

Fermented with White Labs WLP550 Belgian Ale yeast. Yeast starter made day before.

  • cool no worries, have you made a similar since then? i've made a couple porters and i'm brewing a stout tmrw .. but have been wanting to do a belgian one with belgian yeast .. but don't really wanna take an entire day to go through a learning curve and it not turn out right lol

  • @epicbeerdude Nope, haven't made anything similar to it yet but I'll probably try an all grain version with some tweaks to the recipe in the winter time. Good luck with the stout.

  • do u have a video review of the final product?

  • @epicbeerdude I don't. It turned out pretty good. There was a bit of an astringency early but it mellowed out somewhat. It was a good test beer for me, first time using spices and other extra ingredients in a batch.

  • why is the patio furniture laid down? lol

ah, now I know why this beer had a slightly plastic taste to it, when you put the plastic bag in there it melted a little.

Who was filming this? Who was the girl in the background?

speaking of which, you should get some female guests for your shows. I'm sure there's no shortage of hot girls in San Diego (unlike HERE :(

hey what's with the 12-pack of Corona?! lol!

  • @ChadzBeerReviews The furniture was laid down to keep the wind away from the burner. I doubt that bag did anything to add off flavors to the beer. It was more likely from the extract (which I didn't show in this video). That's my mom in the background picking weeds. Corona box was given to me full of empty bottles to use for bottling. There's no point to buy new bottles when you can get empties donated to you. Now I don't bottle in 12 oz. bottles much since you have to clean more of them.

  • @ChadzBeerReviews your comment just seemed like you were all over the place like a kid with a.d.d. so i made a little joke is all. didnt mean any harm

  • @sjjdiienno1 huh?

  • @ChadzBeerReviews a.d.d. much haha just fuckin with you man

  • @Tantrum777 That sounds great! After trying Mikkeller's Single Hop Warrior I'm now a fan of that variety. I'm going to definitely be using it in some future beers.

For me 1.062 will be perfectly fine if it attenuates well. I racked it yesterday and had a decent amount of trub. I didn't take a hydrometer reading though. I'll do that in a day or two and see if I'm ready to bottle this weekend.
