For an iPhone 4S, make sure you match the current version from your iPhone before deleting Cydia from the directory, if you don't see your current download file, it's NOT going to work; here's the catch my version wasn't available after I'd deleted Cydia; I got the following warning: downgrading cydia from 1.1.4 to 1.1.3; no such file; therefore, I ended up restoring Cydia the original way; I'm assuming these steps ONLY work if the download file matches the current version on your iPhone!

Hey man it didn't work... I did everything you suggested even changing it to cydia1 and I got the following message...
/$ dpkg -i /cydia.deb
(Reading database ... 1612 files and directories currently installed.)
Preparing to replace cydia 1.1.1 (using /cydia.deb) ...
Unpacking replacement cydia ...
dpkg: error processing /cydia.deb (--install): unable to create `./Applications/Cydia.app/changes.png': No such file or directory... Please help!

Looks like you forgot the fact that to install OpenSSH you need Cydia, which is a problem for EVERYONE COMING TO THIS VIDEO.
