Corn Flour is actually corn starch. When added to cold water it dissolves and is used as a thickening agent in stews and gravies. If you do not have corn starch u can use flour dissolved in a bit of cold water as well. Always use cold water and mix it seperatly from your food in the pot as it will clump and ruin your recipe. I usually put some curry powder in the hot pot and let it get a bit burned, for around 30 secs, before I add the goat or mutton...I also never add corn flour...Also, I never serve or eat my curry goat with rice and peas, not that it's not good, but I much prefer white rice with curry dishes...Collin is a great chef though, so who am I to argue...I wish I could taste that curry goat...Congrats on your Rosette award Collin...It's well-deserved, from what I've seen and heard.

Corn flour is a thickening agent. It doesn't add any taste to the dish, instead it thickens up the sauce to make it less watery.
