Shelley shows how to make French Onion Soup and the important technique of caramelizing onions.

French Onion Soup
2.5 pounds yellow onions, sliced thin
4 tablespoons butter, melted
1 cup dry sherry
4 cups water
Salt & pepper, to taste

Garnish:
Croutons
Gruyere cheese, grated

Heat cast iron pan over medium heat, add butter & onions, reduce heat and let cook for two hours, stirring occasionally to scrape up brown bits of fond that stick to bottom of pan. Add sherry and water, stir well and scrape down the sides of the pan. Simmer 20 minutes over medium heat. Season with salt & pepper. Ladle soup into ovenproof ramekins or crocks on a sheet tray. Top with croutons and cheese. Broil in oven for 3-5 minutes until cheese is melted and soup is bubbly. Serve.

  • Hi there! I tried to make this recipe exactly as you did here, but I did something wrong. The soup itself came out very very sweet. Why do you think this is? Maybe I didn't use the right sherry...what brand do you use/recommend? Thanks for the video post - I've taken a few classes at th chopping block and I love learning from the experts...thanks! Kathleen
