Jun 11 2011 Update: I just downloaded the iFly 737NG 1.01 for FSX and tried the Saitek multi panel and it has some functionality.
Almost everything works but there are some issues. The dial is very sensitive. In IAS for example can jump from 180 to 300 depending on how fast you turn the knob. However, if done carefully taking into account the sensitivity issue, it is useable.
Also the illuminated buttons do not necessarily correspond with the current state of a given button; you have to look at the MCP to see whether ALT Hold or NAV for instance (btw NAV is LVL-CHG) are engaged or not, however pressing the button will toggle the state even if the light doesn't correspond.
I can dial the ALT, VS, IAS, HDG, CRS, deploy and retract Flaps, use the Trim wheel, toggle A/T on and off. The ALT button is ALT Hold, the NAV button is LVL CHG.
All of the other Saitek panels, work seamlessly with the iFly737. The Yoke, Radio Panel, Flight Switch, Flight Instrument panel.

I run FSX in W7 x64 and the Saitek Pro Flight Multi Panel link up with the AP, CRS, HDG, ALT, NAV, APR, Flaps, Trim, IAS. I use Nav 1 for ILS frequencies.
Generally, addon aircraft fall in one of three categories with respect to compatibility; one, the addon can use mostly all the functions with the exception of perhaps one or two, two, only one or two of the functions work, and three, none of the auto pilot functions work. In every situation you can mitigate the compatibly shortcomings of the addon aircraft, the lack of conformity that is, using the mouse mapping in (registered)FSUIPC and then assigning the mouse clicks to the Saitek buttons and every single function will work.
The compatibility problems with Saitek panels and addon aircraft are caused by design by the manufacturers of the addon aircrafts because the use of their own proprietary (non-conforming) protocol for the autopilot functions.
In reality it is not a Saitek incompatibility issue, but an issue of nonconformity by the addon aircraft manufacturer. Saitek panels work with all default aircraft, and thus are fully compatible with FSX.
I use The saitek multi panel and the other Saitek hardware listed above without modification with my Carenado addons; the Cessna 182Q (no A/T) and also with the Arrow IV are a couple of examples.
The saitek multi panel also works and is fully functional with the 747, 767, MD81/82, A320 by CLS, the Boeing 787 from Abacus to name a few. It requires tweaking, an a lot of patience to configure it to work with the most popular addons such as PMDG, Level-D, Wilco, etc.
How do you get the gauges on one monitor ? I have 2 monitors and I wont one with virtual cockpit and one with all the gauges on
Any Help ?

@MotoHarmer Open a new view; use the bracket ‘[‘ key. Make the new view a virtual cockpit then zoom in the instrument/s you like to display (i.e. ND and PFD) and move the view to its own screen.

Since you have achieved that on three screens you have the sight of the plane without the cabin and in the rest screens the different systems of the plane??
