I'm a little curious as to why a side headshot would take down this particular type of zombie... She even states that the entire brain is dead, except for the brain stem. Why would shooting a dead part of the brain have any affect?

Good question...

I'm not entirely sure he's dead, or at least dead-un-dead. He just stopped attacking her. Even if you see his funeral, there is no way to know if he'll come back or not.

Bad guy had a lot to do. Laundry, dishes, pickup dry cleaning, get his gun cleaned. He missed that in his daily bad-guy briefing.

probably due to the massive drop in blood pressure in the area, bullet fragments tend to rip up large parts of internal tissue eventhough the entry hole is small, there is a fairly big chance the bullet hit the inside of the skull, fragmented and flew round turning large parts of the brain into mush.
