I was wondering how long will this last in the fridge? I am the only one in my family that eats Kimchi. If I was to try to make this a smaller recipe, will it taste the same? Is it possible to make this smaller recipe?

easiest way to peel garlic is to get the whole garlic, break the pieces apart, and put it in a steel bowl and put another steel bowl over it and shake the garlic pieces real hard for about 15 seconds and the garlic pieces autopeel.
