This is a request from Marion. ( a friend from FB) who loves spicy foods and can kick ass in kung fu like me..Yeee haaa!

Ingredients
1/2- 1 lb chicken breast /pork/or beef (sliced thin)
2-3 Thai spur chilies or bell peppers
1-2 Tbsp Thai red curry paste
1/2-3/4 cup coconut milk
3-4 kaffir lime leaves or lemongrass
2 tsp sugar
1 Tbsp fish sauce

  • its better if you cook the coconut milk first. cook it for about 5 mins, and then add in the spicy paste. cook it together until you see a little of oil accumulating on the sides of the pot. set that aside. stir-fry the meat (in a little oil and garlic) in another pot until its cooked. then pour the paste to the meat. then add some bamboo shoots in with it.

    On a side note, dont add too much paste or else you'll feel sick after eating the meal. Less is more...

  • I tried it how Kai cooked it, except using pork. I had to cook the pork first before adding it to the sauce. I also found that my sauce was a little too liquidy. Also, without the bamboo shoots, it looked really plain... =/ I didnt add sugar.
