Humboldt Outdoorsman Special

Ingredients:
1 lb. bacon - diced
1 lb. sausage - crumbled
1 medium yellow onion - diced
1 red bell pepper - diced
1 yellow bell pepper - diced
1 orange bell pepper - diced
2 lbs. medium potatoes - diced
1 tbs. seasoning - Montreal Steak Seasoning
12 eggs - beaten
1 lb. sharp cheddar cheese -- grated

Directions:
Place ½ chimney of briquettes under a 14" oven.
Brown the diced bacon.
Add the diced onions and cook until they start to turn translucent.
Add bell peppers and cook for 10 minutes.
Add one ring of briquettes onto the lid.
Add diced potatoes and seasoning and cook until potatoes start to brown, stirring occasionally.
Reduce bottom heat to 1 loose ring of briquettes. (approximately 14)
Tamp down the potato mixture and pour eggs over the compressed mixture.
As eggs begin to cook, sprinkle crumbled sausage onto the egg mixture.
When eggs are cooked sprinkle the cheese over the eggs and cook until melted.

  • We have many local mm & women who live off the grid in our area. It is a recipe enjoyed by hunters, lumberjacks, Boy Scout Troops, and others spending long hours outdoors. Not everyone who views this version may desire a meal with a high calorie/fat content. This version can be adjusted to suit your own dietary needs. Substitute with egg whites (or EggBeaters), low fat cheese, and meat substitutes as I often do. You have a choice of what you want to add in, or leave out. OCIC Part II

  • Thanks to those of you who like this meal. The title of the recipe says "Our Version" and that is just what this recipe is......our version. People reading this might be thinking of mountain men during the 1800's. The majority of the ingredients in our version would not be readily available or an option for a mm of the 1880's. This version is meant for those who want a hearty meal to sustain their energy level throughout the day. OCIC Part I

  • This looks really delicious! Cast iron cooking is so much better for you than nonstick, which has harmful chemicals and is linked with cancer and Alzheimer's disease. This is a great recipe, thanks! How could we modify it to cook at home with a cast iron pan?

    By cast iron pan, if you mean a skillet--a deep one would be good to use. Also, this was a big batch so you can scale down the size/portions & reduce the amount of ingredients according to the size of the pan. Cover with a lid or foil and bake in home range at the same temperature.

  • @born68 Absolutely amazing that you took the time to respond and that you make a dish called an omlet that is just like this!!! It never takes us 3 hours to do this recipe, but prep and cooking times vary from human to human. We make a skillet egg dish which you cook like a pancake, add ingredients to the middle and fold it over, We call THAT an omelet (or omelette). ;) Congratulations to you also.
