no no no,non ci siamo proprio, carbonara is bacon(pancetta) eggs(cream or in pieces) and cheese(pecorino).that's something made up by him and maybe tastes good but careful with names!!!

I believe the question was because of the famous Italian puttanesca (from "puttana," whore) sauce. And to play off of his staying with monks.

@fidro10 Errata corrige...no pancetta but "Guanciale" i used the English term "bacon". and "guanciale" is'not like a pancetta. the pancetta is a part of the belly of the pig while the guanciale is a part of the cheek of the pig...

@bhnsbarbi what rubbish. english carbonnara? where did u get that from? Our carbonara in england is the same as yours in the states. remember in italy they cook different in every region, so he is cooking a traditional italian one, its just not the one we know... its the same with bolognese, minestrone, and lots of other italian dishes. we only know the one we do in our country but in italy they make it different everywhere.
