well what do you expect ? indian music on a guitar sounds like playing a monomelodic instrrument. in fact the SOUND of a sitar is quite different. but you probably ment the way of playing. and its NOT doodeling, listen really. theres an introduction, a hookline, improvisations, a rythmic setting (probably to a certain indian 4/4 rythm) . if you get into indian music theory you might discover what it means to play this sort of music. its mastership, like ravi shankar.
No actually its nothing like you saying that you can play chords on your flute...because you can play ragas on a sitar and you can also play ragas on a guitar. I suggest you buy the book Guitar Atlas: India....its a good one and I think it will help you with your guitar endeavors...perhaps you will become more enlightened and realize that anything is possible on the guitar. Just keep playing and believe in yourself!

in raga jog the glide between g and s during descent is very important.and on an acoustic guitar unless its modified it would be impossible i think but i could be wrong.
