Greetings! I have had more than a few requests from people asking me to do more recipes using my electric pressure cooker. As you might recall, I have done only the pork chops in golden mushroom soup. But I do lots of other things. My main reason for not sharing more is that I don't know that many people have an electric pressure cooker. My answer is that everyone should have one! I use this a lot, especially when I come home and haven't defrosted something from the freezer. So this is how I usually do my salsa chicken because I can throw frozen chicken in this pot and have dinner in 30 minutes or so.

The other reason I love this recipe is because I usually always have the items I need to make it on hand in my pantry and freezer. I sometimes just use salsa but we like it best fancied up with the pineapple and peaches. If you don't go for fruity meat dishes, leave them out, make it your own. Make a pot of rice while the pressure cooker is doing its thang and you will be sitting down to dinner in no time!

  • @Monicasdestiny I got mine new from HSN. I got one for my friend on ebay 2 years ago for 70 dollars and I recently purchased a new one from an ebayer for $50.00 it is still in the box. I wanted a second one because nothing cooks corn on the cob like this pressure cooker and in 12 minutes! Good luck, I hope you find one. Noreen

  • @Diva63113 Jeanie: yes indeed this is a Wolfgang Puck Bistro pressure cooker. I love it. I have had mine for about 3 years now and use it a lot. I originally paid around $150.00 for it I bought one for my co worker on ebay for $70.00 about 2 years ago. She is a single mom with a little time so I thought this was a nice gift for her. I also recently bought myself another one off of ebay brand new for $50.00. You can get them cheap if you know where to look! Thanks for watching!  Noreen.

  • Hey - trying it now.... except I didn't have salsa or pineapple or peaches - so, I substituted the following: 1) small can of crushed tomatoes 2) 2 fresh tomatoes 3) 1 chopped onion 4) 1 can of Mandarin oranges... it's going to be a Valentine's surprise for sure (actually - anytime I cook it's a surprise)
