Each of us has a family that extends in many different directions. Mary Lou, a Southern widow who loves to eat, considers her family to be those still here and those who have passed on to the better place. There are her blood relatives, her in-laws, and her in-laws' in-laws. Also she includes a few of her wonderful friends, her family's friends, and some people inexplicably connected to her. When Mary Lou envisions cooking, she seems to think those who are gone are still here, since they have left a rich legacy.

Mary Lou's family and also her friends can cook unusually well, because they are serious eaters. Some of her relatives like to cook Cajun style; some, Italian; some, Tex-Mex. Most of them enjoy down-home Southern cooking, but some prefer proper food. All of them always look for the simplest ways to prepare food and still make it irresistible. Don't try to eliminate any of the fussing and fixing written into the recipes because the cooks in Mary Lou's family fuss over food only when it is necessary in order to produce the desired results. They are too busy telling tall tales, enjoying eating, and having gall bladder surgery to be fastidious.
