@rsflutterby They say that the woman was Edie Sedgwick and that Dylan wrote this song for her. She died very young. You can find more about her on Wikipedia.

Apart from Joe's amazing vocals and the gospel hammond, that piano lick does it for me. I wonder how they got that piano sound in those days..

Not a cover - a re-invention. THIS is the way it had to be sung, and only Joe could do it, turning a nice folk tune into an anguished triumph of gospel styled R and B.
