If you use a high quality nonstick pan and a little bit of nonstick cooking spray to help sweat some of the ingredients that can help. You just need to be cautious however, not to cook them (especially onions and garlic) over too high of a heat or the natural sugars and proteins will burn quickly, ruining your dish. My job requires that I stay lean and very strong. I love your recipes. Is it possible to cook these recipes without oil? My stomach just does not handle oil very well.

Ok- I realized after I posted this that the sauce I prepared is NOT a traditional Demi-Glace by definition. This sauce should be called a reduction. I cannot change the title once posted. Thanks!
