What filter did you use at 00:15? I am trying to figure that out but have not found a solution yet. Any advice?

@johnrholman I would recommend the Earth filter from true blue and the kodachrome filter too! They borh give a nice look but both are customisable in videostudio X2 pro if trueblue effects are included.

What filter did you use during the shot of the balloons taking off at 00:14? Whether in post or otherwise.

@johnrholman Hi, I used a graduated ND filter while filming, then in post I used the ektachrome filter in trueblue effects. It gives a nice bluish film look although I think the tint was orangey-pink. hope that helps?

This is brilliant. I've just bought the HV40. Would it be possible to do this time lapse photography with it? If so how?

I recorded the film clips in normal time with 1080 25p then sped them up in the editing programme. The length of the original clips are limited to 1 hour as a result of the tapes. Alternatively you can use the remote control to take photos every 2 seconds or so then use quicktime pro to turn the individual images into a sped up timelapse at 25 frames a second or less. Or try buying an intervalometer (not sure than was spelt correctly). Hope this helps, best of luck :)
