Hi myrisiu. All fruits that turn brown in the air contain the enzyme polyphenol oxidase, which react with oxygen in the open air and turn the flesh brown - aka oxidation. The avocado pit slows the oxidation process by keeping those enzymes inactive. Whether the pit turns acidic when exposed to air or simply acts as an oxygen barrier is yet unclear. Covering up your avocado with a tight wrap or sprinkling with lemon juice will also slow the oxidation process.
