Ingredients:
3 Pizza doughs
3 heads of garlic
1 15 oz can of tomato sauce
1 bag of white mushromos
i bag of Crimini mushrooms
2 cans of Artichoke Hearts in Water
2 lbs Sweet Italian Sausage
Black pepper to taste
Approx 8 oz fresh Mozzarella Cheese
3 Tbsp Parmiggiano Reggianp
2 eggs
3 Tbsp Extra Virgin Olive Oil
Remove casings from Sausages and sautee until crunchy and brown. Drain on paper towels
Sautee Mushrooms in olive oil then add artichokes sautee together
Cut tops off the heads of garlic and add the oil and salt on top of them. Wrap them in foil. Bake in a 450 degree oven for 20 min. Remove them from foil and then remove the cloves. Mash the cloves with a forRoll out the Poizza dough in corn meal.
In the center place garlic paste tomato sauce and mushroom, artichokke and sausage mixture and top with mozzarella
Mix up the eggs with a fork and with a pastry brush go around all of the outer edge of the dough
fold the dough over the filling and seal well
Top with some tomato sauce in the middle and top with Parmiggiano Reggiano
Transfer to a foil lined baking sheet and bake at 450 degrees for 20 minutes
Let it rest before cutting it open
each Calzone serves 2 people
this makes 3 large calzoni
