@Annie1962 sarcastic I was, egg is one of the meat best friend, venison or beef, it is still a tartare, sometimes what seems to be ou there is in reality very close to home, where it all feels familiar, sorry Annie for my little joke that didn't make sens to you, your description is spot on. maybe we should let everyone know that most ingredients added to the raw mince contain vinegar, so it is a quite well thought dish. thanks anyway

@eplumain it's steak tartar , raw flavoured meat that is minced and mixed with strong flavoured ingredients. It's traditional to put a raw egg yolk on top in the centre, to mix through.

Marco Pierre white missed something. Make sure the meat is fresh from a reputable butcher or hunted when you eat it raw.

I think the appeal of Marco, now, is that he is a world renowned chef who takes into consideration the eating habits and lifestyles of the general public.
So, he's not telling people to go out and buy top quality caviar or John Dory, and he's not telling people to build an oven in their garden to cook veg in. But he knows what he's talking about, and he's not showing off despite it.
