Chef: Dr. CV Krishnamoorthy MD
INGREDIENTS:
2 cloves of GARLIC & about the same amount of GINGER (finely cut)
1 SHALLOT or small ONION (thinly sliced)
1 - 2 boneless, skinless CHICKEN breasts (washed & cut into cubes)
5 - 7 CURRY LEAVES
1 - 2 GREEN CHILI PEPPERS (cut into halves)
3 - 6 pieces of CILANTRO (pulled into several pieces)
SPICES:
turmeric, chili powder, black mustard seeds, cumin seeds, salt, garlic-chili paste (to taste)
WATER & OIL
MATERIALS USED:
wooden ladle
a few bowls
spoons
forks
cutting knives
garlic hammer
enamel-coated cast iron casserole pot with lid
NOTE: all of these ingredients are proportionate for 1 - 2 chicken breasts. If you want to make more, please adjust the ingredients accordingly.
NOTE: this dish is VERY SPICY. if you are uncomfortable with spicy food, be conservative when adding the spicy ingredients. REMEMBER, it is easier to add more spices later to increase spiciness than to take spices out to decrease spiciness.
