Seing all of those chefs stirring risotto contoniusly is just painful to any self-respecting Italian. Just add all of your stock at once, stir once and let the stock evaporate slowly: as long as you DO NOT STIR the risotto will not stick and will not get overdone (if it's properly toasted first). Just stir at the end, while its' still "wavy" to create the cream by combining the fats, the starch and the leftovers of liquid.
