@hardgayramen4ever The liquid nitrogen is used because it is the fastest way to freeze the custard, this means that smaller ice crystals form and the ice cream is incredibly smooth. Its done at the table to involve the guests and give a bit of theatrics to the meal. So whats the problem with using it?

In a traditional Chinese tea ceremony, the type of teapot used is made of a special clay. There are several pours for the tea, and the belief is that the higher the quality of the tea, the more pours you would have, each one being more delicious than the last.

So what happens is this:
1) Hot water is poured into special tea pot
2) Tea pot is closed with the lid
3) Tea is poured OUT of the tea pot, through the box with grate - this essentially decaffeinates the tea
4) Repeat stepts 1-2
5) Hot water is poured OVER the closed tea pot which sits on top of the grate. With the right type of clay teapot, the water reacts to the clay pot and seals the whole thing and is supposed to offer a richer more subtle flavour.

It was interesting and we had a great time. I do appreciate people who push the bounds, regardless of the application, food, architecture, rules, whatever.
However, for me, it does not evoke memories of warmth and comfort. Happy to have had the experience, may not go back.
