Wow. What's different between the chinese yeast balls and the yeast we find in western grocery stores..? And when you let it stand.. do you let it stand near at room temperature? Wont it go bad?

@lycheesack Chinese yeast known as Ragi Tape. This kind of yeast is produced in Indonesia. "Ragi Tape SL" is recommended.

I dont think what I had in mind is rice wine! Ha-ha. I was going to ferment uncooked rice. . . It's called hooch. Ive never completed a batch so I thought I would do a little research. After watching this I think im still safe. When the final product is distilled in the making of liquor, the first part that comes off the distilation is posion. . . Im veery curious. I also think you should speak to a shef! That there looks like its for cooking. :)

how many yeast balls yould you use if i use 4 cupss of cooked rice?
Something that bugs me with many rice wine recipes is that no Airlock what so ever is used. How is this possible?
I am very new to making alcohol, but I thought it was something necessary?
If someone can clarify this to me I would be much appreciate

@mitragynine Some people first put a sterilized cloth over the bottle before screwing it shut- which may serve to seal it a bit better and lock out the air. This works like an airlock and is a very good idea. If the bacteria in the air gains access to the wine- it may sour and/or go bad. It is an especially good idea to use an airlock in warm weather when bacteria are rampant. No cloth/ airlock wasn't a problem for me as I did an 8 day brew in cold weather thereby limiting exposure to bacteria.

@uniformscaling Yeah- in fact I should have mentioned in the video that one ball is usually enough. I may have gone a little overboard with the yest due to the cold front that was passing at the time and the fact that I had to have some wine ready in just one week. Using more yeast than is necessary only makes it more bitter. I'm glad yours turned out well. One has a beer-like quality to its taste.
