This video also shows how to unlock stage EX 1, it is done by throwing the stage boss' big attack right back at it.
I wasn't actually intending to do the trick on the time that it happened, since I hadn't shot all of the other parts off the boss.

seems like warashi actually went backwards in terms of bg gfx when they made Exelica :/ ...not that it stops me from really enjoying both games :D
