You've seen him on Bravo's Top Chef, now watch Richard Blais prepare Bacon Ice Cream at the CIA's Top Chef Class held at the Astor Center in NYC.
Richard will be returning to his alma mater on November 8th for a special cooking demonstration visit www.ciachef.edu for more information.
Bacon, Bacon, Bacon, Bacon, Bacon on a 1 patty burger, 2 patty, 3 patty burger, more bacon, more, more, more. Now with ice cream, mmmmmmmm bacon. Must we ruin ice cream w bacon ?? Just like pineapple on pizza, is it pizza anymore once you put fruit on it ? We did the same thing in H.S. cafeteria, mix cole slaw, fries, ketchup, mustard, jello, milk and give me a quarter to eat it.

FYI: maple syrup doesn't come out of the tree, maple water does (eau d'érable), which is not sap but moisture being drawn out of the roots up to the tree in early spring. This water is then boiled down to make syrup; it takes 40 litres of maple water to make 1 litre of maple syrup. It is this syrup which after being boiled down even more, is poured onto snow or crushed ice and scooped up onto popsicle sticks. In French it is called "tire d'érable" which loosely translated, means "maple taffy".

I like bacon. I like ice cream. But this, ummmmm..... I am somewhat leary. Is ice cream not bad enough for you as it is? Does it really need to be paired with bacon?
"Yes waiter, for dessert, I would like a quadruple bypass and a debilitating stroke on the side."
