Thank you for a great explanation on how to make the onions with the fish! This was great. I have had Escovitch fish and loved it but had no idea how the accompanying onions were made which I loved just as much as the fish. Please make more videos :)

Wow who cares about a tail? Most places leave it on and these are "Jamaican" places that I've gotten my Escovich from. You don't have to eat the tail or the head ( I don't). Aromatics can be added and cooked right along with fishas with any protein but its never eaten. Example thyme sprigs..sliced lemons..heads of garlic etc. Great video..very professional. This is coming from a professional. People really kill me. This isn't baking..its cooking..you can do as you please.
