Good question there. But the response is simple. If you watch "The Missing Link", you'll see that aiming the sword for a zap is a bit more difficult than it appears. The zap can be blocked, dodged or absorbed, as is shown several times in the series. Just watch Zelda use Link's sword and try to zap a Stalfos! But other than that, I don't know.
