i dont think there are " far too many" condiments at all. everybody has their own tastes and my family also loves lots of herbs!!! Good job and keep it up!

I think I remember my grandmother making something like this, and smearing a little anchovy paste on the inside of the chicked before adding anything else. I just recall that they tasted wonderful. Have you ever heard of doing it like that?
