this is different to others in morocco I watched making mint tea, in the first few stages they actually keep the water from the first wash as its known to be pure, and the second stage they wash out the pot and throw away the water...here he discarded the first cup

The first wash is known to remove the bitterness off the fermented tea leafs. It also discards any dust or impurities.

Yes, It depends where you are in Morocco, they can serve tea with mint and Jasmine or fresh orange blossoms, or blue verbina, or fresh thyme...

Yes, I use dry thyme in many of my recipes. I use it when making soup, beans with lamb and sausage, tea, ... good luck.
