though i never had flan before...how does it taste?

@cookingwithpolly it seems a lot easier to just let the sugar sit in the pan with no extra water..that doesn't crystalize..

tastes great! basically a custard with caramelized sugar and the tartness of the berries.

When the syrup bubbles it may spatter onto the sides of the pan. That creates sugar crystals which can cause the syrup to "crystallize" turning the smooth syrup into a gritty mess. Brushing the sides of the pan pushes down the sputters and prevents them from drying on the sides preventing crystal to contaminate the syrup. Hope that answers your question.
