This looks too time consuming. I made a recipe for coffecake using regular unbleached white flour just to test it out and I did like it, but it's just takes too much time for me to do this on a regular basis. I only let it soak for a few hours, but I'm not comfortable soaking things with dairy unrefrigerated overnight.
